This is a single vineyard, sustainably grown wine, crafted from the very best grapes from the oldest vines surrounding Highfield. The grapes were hand picked, hand sorted on a sorting table and hand plunged throughout ferment. 15 months in new French oak barriques has created a well structured, age-worthy Pinot Noir. The wine comes in a one or three bottle wooden box with a certificate. Sales of this wine go towards the Mill Stream project which supports the planting of native flora along the stream and encourages biodiversity.
