Made in the same celebrated Elstree style, extended maturation on yeast lees has provided savoury, toasty aromas to complement the fruity flavours of this elegant sparkling wine. Natural lively acids have mellowed during the maturation process resulting in a balanced, soft and rounded mouth-feel.
“Only a few Marlborough bubblies can stand close comparison with Champagne (the real stuff). From one vintage to the next, one of the region’s finest sparklings is Elstree, made at the Highfield winery with technical input from the Champagne house of Drappier” Michael Cooper, Cuisine Magazine
